Everyone's Summer Problem starts w/ a Z



And we are so far not being overwhelmed excepting the Miranda pictures. That was our first one & a surprise. I had it positioned so that it was the first thing Mike saw when he woke up from his nap & was rewarded w/ a funny expletive I shan't retype. We fed it to the goats over the course of 2 days. I am not canning but trying my hand at dehydrating. We've not got a dehydrator but the camper shell in the back of the truck or the dashboard of the van work prodigiously well. I lay them out in a single layer over some cookie cooling racks over single fold diapers. Birdseye fabric is SO handy to have around, I use it everywhere. I'm also drying basil. The basil was 2 days, zucchini 4.



I made a pizza crust courtesy of Backwoods Home magazine.
  • 3 cups shredded zucchini, pressed of liquid
  • 2 beaten eggs
  • 1/2 cup grated cheddar
  • 1/2 cup grated mozzarella (I substituted goat cheese)
Mix, press out on your pan & bake at 400 for 20 min. I didn't make pizza, I made a giant salmon patty & cut into wedges. I then mixed mayonnaise & ketchup to spread on that we called pink slime since that's the current controversy. It was colourful & the children freaked out on first sight. I had to drag Charlotte in & put consequences in place for not trying 1 bite but they ended up loving it & cleaning their plates. Mind that you fry your patty(ies) in bacon grease, that helps.

Wow!!! I've never seen a zuccinni that big!! You must be doing something right in your gardening!! I was in our old neighborhood last week and it made me think of you. I'm glad you are doing well and enjoying homesteading so much. The kids look great!!

Thanks Kristal, I enjoy watching your children from your blog too. The garden enjoys cow manure mixed w/ used goat straw, it's in its 3rd year.
